Sugared Rose Petal Recipe
During our recent Mother's Day Rose Tea at Tucson Botanical Gardens I demonstrated how to create sugared rose petals. They are a simple and beautiful garnish. If you would like your guests to be able to eat them (as roses are an edible flower), make sure you purchase pesticide-free roses/petals.
Sugared Rose Petal Recipe
Pick old-fashioned, scented red or pink roses. Use only perfect petals.
Beat an egg white until light and frothy.
With a pastry brush, completely brush each petal on both sides with egg white. Arrange the petals on a sheet of parchment paper laid on a baking sheet or tray. Pour superfine sugar into a shallow dish and dredge both sides of the petal(s) through (ultra-fine sugar is available in most grocery stores or you can blend regular sugar in a food processor until you get the right consistency) and leave to dry overnight. Store in an airtight container.
NOTE: Take care to cover each petal completely, as any bald patches will mold.
