Chantilly's First Cooking Class was a Hit!-- Cups of Tea, Champagne and Recipes

This past weekend Chef Jenny Basandrai and I held our first "Tea & More" Cooking Class titled "Create an Afternoon Tea."  Participants enjoyed a tea punch and spicy pecans as we discussed elements of hosting an afternoon tea.  We demonstrated multiple recipes including our beloved Champagne Almond Egg Salad on homemade Almond Chive Bread and a Salmon Mousse Cucumber tea sandwich with garlic butter.  Classic Cream and Apricot White Chocolate Scones and a trio of delicious desserts (Blueberry Lemon Mousse Tartlets with a boysenberry tea-infused crust, Decadent Chocolate Brownies and Poppyseed Tea Cake with orange cream), were also baked and assembled.  The tiers were then put together while everyone asked questions and sampled.  Participants sat down to enjoy a spinach salad and a three-course afternoon tea along with cups of tea and a delicious Kyoto Cherry Rose tea-infused champagne.
